Beef Rendang: The Ultimate Indonesian Celebration Dish



As an Indonesian woman, I can tell you that Beef Rendang is more than just a dish—it’s a symbol of love, tradition, and togetherness. Growing up in Indonesia, rendang was always the centre-piece of our most special occasions. Whether it was a wedding, a festive holiday, or a big family reunion, rendang brought everyone together around the table. And now, as Christmas approaches, I can’t help but draw parallels between this dish and the way we celebrate here in the UK. It’s hearty, warming, and perfect for gatherings with loved ones.



Rendang: A Celebration of Patience and Flavour

Rendang originates from the Minangkabau people in West Sumatra, and its preparation is a labour of love. The slow-cooking process allows the beef to absorb all the incredible spices while becoming tender and coated in a rich, caramelised sauce. It’s not a dish you rush—it’s one you take your time with, which makes it perfect for the festive season when we want to show our love through food.


Rendang is a traditional Indonesian dish often served at special occasions such as weddings.


In Indonesia, rendang is often served during Eid, weddings, or family gatherings, where large platters of this dish feed the whole family. It’s more than just food—it’s about connection, tradition, and celebration. For me, making rendang brings back memories of being surrounded by family, laughter, and the smell of spices wafting through the air.

Ready to bring this celebration dish to your home? Here’s how to make authentic Beef Rendang:



Authentic Beef Rendang Recipe

Prep time : 30 minutes

Cooking Time : 4 Hours



Ingredients:

  • 1and half kg of beef (cut into large 10x10 cm chunks - Chuck Steak or other cuts suitable for slow cooking are best. Avoid using extra lean meat, as the rendang may turn out too dry.)

  • 1600ml coconut milk (4 Cans of good quality/ rich and creamy coconut milk )

  • 8 kaffir lime leaves

  • 2 turmeric leaves (optional)

  • 4 lemongrass stalks (bruised)

  • 3 tbsp tamarind juice

  • 2 tbsp brown sugar

  • Salt to taste


Spice Paste:

  • 100gr shallots or brown onion

  • 80gr garlic

  • 5 Big red chilies (adjust to your spice preference) / 100gr

  • 3 cm galangal / 40gr

  • 3 cm ginger / 40gr

  • 1 tablespoon Coriander seeds

  • 1 tablespoon of cumin seed

  • 2 cm turmeric / 1 teaspoon of powder

  • 1tsp Cinnamon powder

  • 1 tsp of nutmeg powder


Instructions:

  1. Prepare the Spice Paste: Blend all the spice paste ingredients into a smooth mixture. Add a little water if needed.

  2. To cook the spice paste: Heat a large pan (preferably wide and shallow for optimal evaporation). Add all the coconut milk and the smooth paste, stirring well to combine.

  3. Add the Beef: Stir the beef into the spice paste, ensuring each piece is well coated.

  4. Add the kaffir lime leaves, lemongrass, turmeric leaves (if using). Bring to a boil.

  5. Simmer: Reduce the heat to low and simmer uncovered for 3-4 hours, stirring occasionally. Allow the liquid to reduce and the sauce to thicken. The oil will separate and coat the beef, giving it that signature rendang look.

  6. Season: Add tamarind juice, sugar, and salt to taste. Adjust seasoning as needed.

  7. Serve: Remove from heat and serve with steamed rice, or as part of a festive spread.
