Cook the Perfect Authentic Beef Rendang at Home

If you love rich, flavourful dishes that tell a story with every bite, then beef rendang is a must-try. This traditional Indonesian dish is a slow-cooked masterpiece, packed with spices and tender beef that melts in your mouth. I’m excited to share with you how to make authentic beef rendang right in your own kitchen. It’s easier than you think, and the results are absolutely worth it!

What Makes Authentic Beef Rendang So Special?

Authentic beef rendang is not just a curry or stew. It’s a celebration of spices, coconut milk, and patience. The magic happens when the beef slowly simmers in a blend of aromatic herbs and spices until the sauce thickens and clings to the meat. The flavours deepen and develop a beautiful complexity that’s both spicy and slightly sweet.

The key ingredients include fresh turmeric, galangal, lemongrass, and kaffir lime leaves. These might sound exotic, but you can find them in most Asian grocery stores or online. Using fresh ingredients makes a big difference in the taste.

Step-by-Step Guide to Making Authentic Beef Rendang

Authentic Beef Rendang Recipe

Prep time : 30 minutes

Cooking Time : 4 Hours

Ingredients:

  • 1and half kg of beef (cut into large 10x10 cm chunks - Chuck Steak or other cuts suitable for slow cooking are best. Avoid using extra lean meat, as the rendang may turn out too dry.)

  • 1600ml coconut milk (4 Cans of good quality/ rich and creamy coconut milk )

  • 8 kaffir lime leaves

  • 2 turmeric leaves (optional)

  • 4 lemongrass stalks (bruised)

  • 3 tbsp tamarind juice

  • 2 tbsp brown sugar

  • Salt to taste

Spice Paste:

  • 100gr shallots or brown onion

  • 80gr garlic

  • 5 Big red chilies (adjust to your spice preference) / 100gr

  • 3 cm galangal / 40gr

  • 3 cm ginger / 40gr

  • 1 tablespoon Coriander seeds

  • 1 tablespoon of cumin seed

  • 2 cm turmeric / 1 teaspoon of powder

  • 1tsp Cinnamon powder

  • 1 tsp of nutmeg powder

Instructions:

  1. Prepare the Spice Paste: Blend all the spice paste ingredients into a smooth mixture. Add a little water if needed.

  2. To cook the spice paste: Heat a large pan (preferably wide and shallow for optimal evaporation). Add all the coconut milk and the smooth paste, stirring well to combine.

  3. Add the Beef: Stir the beef into the spice paste, ensuring each piece is well coated.

  4. Add the kaffir lime leaves, lemongrass, turmeric leaves (if using). Bring to a boil.

  5. Simmer: Reduce the heat to low and simmer uncovered for 3-4 hours, stirring occasionally. Allow the liquid to reduce and the sauce to thicken. The oil will separate and coat the beef, giving it that signature rendang look.

  6. Season: Add tamarind juice, sugar, and salt to taste. Adjust seasoning as needed.

  7. Serve: Remove from heat and serve with steamed rice, or as part of a festive spread.

Tips for Perfecting Your Rendang

Here are some friendly tips I’ve learned from cooking rendang many times:

  • Choose the right cut of beef: Chuck or brisket works best because they become tender and flavourful after slow cooking.

  • Don’t rush the cooking: Low and slow is the secret. It allows the flavours to develop fully.

  • Use fresh spices: Fresh turmeric and galangal give a bright, authentic flavour.

  • Adjust the heat: If you prefer less spicy, reduce the chilies or remove the seeds.

  • Serve with care: Rendang is perfect with steamed rice or coconut rice. It also pairs well with simple vegetable sides.
