I remember the first time I made it - the aroma filled my kitchen, and the taste was simply unforgettable. Today, I want to share with you how to master this delicious dish in a way that’s easy, fun, and perfect for any home cook.
What Makes an Authentic Thai Curry Recipe Special?
Thai green curry is not just about mixing ingredients; it’s about balancing flavours. The authentic Thai curry recipe combines fresh herbs, spices, and coconut milk to create a dish that is creamy, spicy, and slightly sweet. The green colour comes from fresh green chilies and herbs like coriander and basil.
Here’s what makes it authentic:
Fresh ingredients: Using fresh green chilies, kaffir lime leaves, and Thai basil is key.
Homemade curry paste: Making your own green curry paste from scratch gives the best flavour.
Balance of flavours: Sweet, salty, spicy, and sour all in one dish.
Coconut milk: Adds creaminess and richness.
Proper cooking technique: Sautéing the curry paste before adding coconut milk helps release the flavours.
When you cook this dish, you’re not just making food; you’re creating an experience that connects you to Thai culture and tradition.

Do you cook chicken before adding to green curry?
This is a question I get asked a lot. The answer is no, you don’t need to cook the chicken separately before adding it to the curry. Here’s why:
When you add raw chicken slices directly to the simmering curry, they cook gently in the coconut milk and curry paste.
This method keeps the chicken tender and juicy.
Cooking the chicken in the curry also allows it to absorb all the wonderful flavours.
Just make sure your curry is simmering gently, not boiling hard, so the chicken cooks evenly without becoming tough. Usually, it takes about 5-7 minutes for thin slices to cook through.
Step-by-Step Guide to Making Thai Green Curry at Home
Now, let’s get cooking! Follow these simple steps to make your own authentic Thai green curry:
Begin by heating 2 tbsp of vegetable oil in a pan.
Add the freshly made paste, along with the lime leaves and cook for a minute.
Pour in 60ml of coconut milk and cook on medium heat until the coconut oil starts to separate (3-4 minutes).
Add the chicken and coat it with the paste. Cook for another 3 minutes.
Add the remaining coconut milk and chicken stock, bring it to a simmer and cook for another 7-10 minutes until the chicken is tender. Stir gently.
Add fish sauce and sugar and lime juice to taste this combinations will balanced the flavour. I like salty so mine add more fish sauce.
Add the green beans and remaining vegetables, cook until they are al dente and then remove from heat.
Garnish with Thai basil leaves and finely chopped chillies.
Serve hot with steamed Jasmine rice.
Enjoy.
.This recipe is flexible. You can swap chicken for tofu or prawns, and add your favourite vegetables. The key is to keep the balance of flavours and cook gently.

Tips for Making Your Thai Green Curry Even Better
Here are some friendly tips I’ve learned from cooking and teaching this dish:
Use fresh herbs whenever possible. They make a big difference.
Don’t rush the curry paste step. Sautéing it well brings out the best flavours.
Taste as you go. Adjust fish sauce and sugar to suit your preference.
Serve with jasmine rice to soak up the delicious sauce.
Try making your own curry paste. It’s easier than you think and tastes amazing.
Keep coconut milk full fat for the best creaminess.
Add a squeeze of lime at the end for a fresh twist.
