
Vietnamese Beef Salad

Ingredients;
180g sirloin steak
50g cooked rice noodle ( Follow cooking instructions on the packet )
25g jullienne carrots
Thinly sliced cucumber
Thinly sliced red onion
A handful of fresh mint leaves
Sprinkle of toasted sesame seeds
Salad Dressing
2 tbsp brown Sugar
2 tbsp of finely chopped garlic
2 tbsp of finely chopped ginger
2 tbsp of fish sauce
2 tbsp white rice vinegar
1 tbsp lime juice
1/2 tbsp finely chopped red chillies ( optional)
Instructions
Mix all the salad dressing ingredients and set aside.
Put the steak in a dish, add 2 tablespoon of dressing, cover with cling film and leave to marinade for at least 15 minutes.
Prepare all the salad ingredients, and plate up.
Cook the steak in a hot grill pan, turning and cook to your taste ( medium, well done etc )
Take off from the grill pan and cut thinly into strips and place on top of the noodle salad. Add
the rest of the salad dressing and toss together.
Sprinkle on the toasted sesame seeds and fresh mint leaves for garnish.
